Broccoli Cheddar Quinoa Bites

Ingredients

  • 1 1/2 cups chopped cooked Foxy Broccoli 
  • 1 1/2 cups cooked quinoa 
  • 1 1/4 cups shredded Cheddar cheese 
  • 3 eggs, beaten  
  • 2 green onions, thinly sliced 
  • 1/2 cup grated Parmesan cheese 
  • 2 tsp finely chopped fresh thyme 
  • 1 1/2 tsp Dijon mustard 
  • 1 clove garlic, minced 
  • 1/2 tsp salt  
  • 1/4 tsp each red chili flakes and pepper

Preparation

  1. Preheat oven to 375˚F. In large bowl, stir together broccoli, quinoa, Cheddar, eggs, green onions, Parmesan, thyme, mustard, garlic, salt, chili flakes and pepper. Spoon evenly into 24 greased mini muffin cups.  
  2. Bake for 15 to 18 minutes until golden brown and set. Let cool for 5 minutes; invert onto rack. Let cool completely or serve warm.
