Iceberg Lettuce

Iceberg lettuce is one of the most recognizable veggies that call the produce aisle home. Despite having a higher water content than other lettuce varieties, its leaves are still a healthy choice to chomp on as they are low in calories and naturally fat-free.

The name “iceberg” goes back to this variety’s roots in the 20th century in California when ice was required to prevent spoilage of lettuce on trains taking the heads to market.

Handling Tips

Select green heads with crisp outer leaves. To wash, remove the core with a paring knife, open the head with your hands, immerse in a bowl of cool water and swish gently. After 30 seconds, blot dry with paper towels. Roll the leaves in paper towels and a plastic bag to preserve in your refrigerator’s crisper up to one week.
