Ingredients:
1 lb. Pinto Beans soaked overnight.
2 cloves crushed garlic
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 lb bacon 2 coarsely chopped onions
1 teaspoon pepper (at least)
1/2 teaspoon salt
4 Hamhocks
Cooking Instructions:
Place all ingredients in large pot and cover with water by 2
inches. Bring to boil and
then cook over low heat until beans are tender. If you soak
the beans overnight, start
checking for doneness in about an hour. Add water if needed.
Serving Suggestions:
Serve over or with cornbread on the side.
Ingredients:
1 large hen, steamed, boned, and diced (reserve broth)
2 large onions, chopped
1 large can V-8 vegetable juice
1 large can peeled tomatoes
1 small can peeled tomatoes
1/4 cup Worcestershire sauce salt and pepper, to taste
2 pkg. frozen baby lima beans
2 pkg. frozen okra
2 pkg. frozen whole kernel corn
Optional: Tabasco or other red hot pepper sauce, to taste
Cooking Instructions:
Cook chicken broth, diced chicken, tomatoes, juices, onions,
and seasonings until fairly thick.
Add vegetables and continue to cook until vegetables are done
and stew is a good consistency.
You may vary kinds of vegetables and seasonings according to
your taste.
Serving Suggestions:
This is great winter faire.
Additional Comments:
Fresh vegetables are better if in season and available, but
frozen are easier.
Ingredients:
2 cups flour
2 teaspoon baking powder
1/2 teaspoon baking soda 1/2 teaspoon salt
1/4 cup shortening
3/4 cup buttermilk
Cooking Instructions:
In a bowl, combine the flour, baking powder, baking soda, and
salt; cut in
shortening until the mixture resembles coarse crumbs. Stir in
buttermilk;
knead dough gently. Roll out to 1/2 inch thickness. Cut with a
2-1/2 inch
biscuit cutter and place on a lightly greased baking sheet.
Bake at 450 degrees
for 10-15 minutes or until golden brown.
Ingredients:
2 lb Red snapper fillets
1/4 c Grated onion
2 tb Orange juice
2 tb Lemon juice 2 ts Grated orange rind
1/2 ts Salt
1/8 ts Nutmeg
Cooking Instructions:
Thaw fillets if frozen. Cut fish into 6 portions. Place in a
single layer, skin side down,
in a well-greased baking dish, 12x8x2 inches. Combine onion,
orange and lemon juice,
orange rind, and salt. Pour over fish; cover and place in
refrigerator to marinate 30 minutes.
Sprinkle fish with nutmeg and pepper. Bake in a moderate oven,
350F, for 25 to 30 minutes
or until fish flakes easily when tested with fork.
Serving Suggestions:
Serve with a cool tossed salad and sweet potato fries.
Additional Comments:
This is standard fare in the Florida Keys. For dessert, Key
Lime Pie is almost mandatory.

8 large potatos
1 cup mayonnaise
8 boiled eggs
2 cups diced onion
2 tablespoons mustard 1 lb fried and diced bacon
2 cups diced celery
4 tablespoons relish
2 teaspoons salt
Cooking Instructions:
Peel and dice potatoes into bite sized pieces. Boil in large
pot until
desired doneness is reached. Drain and let cool.
Once the potatoes are cooled mix all ingredients in a large
bowl.
Adjust mayonnaise, mustard and spices to taste. Refrigerate
until cool and serve.
