The crisp, curly leaves of green and red leaf lettuces and the soft, textured leaves of butterhead lettuce store high concentrations of vitamin A and beta-carotene, which have anti-oxidant properties and contribute to healthy eyes and skin. Wash before storing
Choose bright, crisp leaf lettuces without discolorations. After purchase, remove any discolored outside leaves, remove core and rinse leaves well with cold water. Pat dry and wrap in paper towels and a plastic bag before storing in the refrigerator crisper up to one week. Store separately from apples, pears and bananas, which release a ripening agent that shortens lettuce's usable span.
